And that's what you expect: there's a special yummy pink food that I thought up for today and also - as befits a proper birthday party - great gifts . Now comes the good news: The gifts are for you! And they are already waiting to beautify your kitchen or your dining area in the near future. After dinner, you will learn what you need to do to get a bit more pink in your home soon.

But now to table, to table!

Here comes the recipe for pink risotto with pieces of deer and cilantro tangerine pesto

For this great occasion I really wanted to cook something special. Pink should be it and no dessert please. A frolic in the (blog) growth can not only sweet treats. I also wanted to try something that had not been spotted in my small galley before. And so the court got together bit by bit until the plan was up:

What makes food look pretty pink? If you do not want to put on artificial food colors, beetroot is the perfect choice. What can you color with it? Pasta, potatoes, soups, rice ... yes rice! How about a nice, slippery risotto? A pink risotto, great. A risotto needs a topping. Maybe a delicious piece of meat. I have never cooked game. So wild. But not too sophisticated ... some deer or deer. And cooked gently at low temperature in the oven. Now missing a taste icing on the cake. A sauce, a relish or a pesto? Sauce for risotto - rather not. Relish may be too strong. But a pesto could go well. With coriander, a bit spicy ... and with a little fresh kick ... mandarin. Why not? Let's go crazy:

And this is how it works for 3 - 4 people:

Tranches of deer:
Preheat the oven to about 70 degrees. Wash 3 small deer medallions from the ball, pat dry and place on a baking sheet lined with parchment paper. Put a meat thermomether in one of the medallions. Put in the oven and cook for about 1 hour. Keep an eye on the temperature on the thermometer. When the core temperature is around 65 degrees, remove from the oven. (Remove the dried beetroot slices from the next step.)

Heat some butter in a small pan and fry the medallions very sharply from each side for about 30 seconds , Remove from heat and season with salt and pepper .
Pink Risotto:

With the deer in the oven, chop 1 onion and 1 clove of garlic . Heat 1 tablespoon of butter in a heavy saucepan and sauté the onion and garlic gently. Add 150 g of Abori rice (or substitute rice pudding) to the saucepan and stir-fry while stirring. Pour 100 ml of white wine and stir until the wine is absorbed. Peel red beets (it is best to put on disposable gloves and protect clothing) ) and split in half. Finely grate one half.Add the grated red bed to the rice and stir. Then gradually approx. Add 800 ml of very light beef stock to the rice. Always wait until the broth is drawn into the rice, then add more broth. Stir frequently. After about 25 minutes, try if the rice is soft, but the individual grain is still noticeable. If necessary, allow to simmer a little bit more.

Then switch off the heat and place 1 handful of grated Parmesan and 2 tablespoons butter under the risotto. Season with a little salt and pepper . Keep warm.
Coriander & Tangerine Pesto:

1 bunch of coriander 1 untreated mandarin and with 1 pinch of salt, pepper, chilli , 1 pinch of ground vanilla and 1 sip of olive oil in the mortar. Process into a smooth paste and perhaps add some olive oil . Trigger the mandarin fillets, cut into small cubes and stir in the pesto.


Assembling:
Put the risotto on a plate. Cut the deer into thin slices and arrange it fan-shaped on the risotto. Apply the oven-dried beetroot slices and place 1 teaspoon coriander pesto on top. Garnish with thyme sprigs and cress leaves. And then indulge.
